For the Mushroom Masala:

  • -- 500g fresh mushrooms, cleaned and sliced
  • -- 2 large onions, finely chopped
  • -- 3 tomatoes, pureed
  • --3-4 cloves of garlic, minced
  • -- 1-inch piece of ginger, grated or minced
  • -- 2 green chilies, slit lengthwise (adjust according to spice preference)
  • -- 1 teaspoon cumin seeds
  • -- 1 teaspoon turmeric powder
  • -- 1 teaspoon coriander powder
  • -- 1/2 teaspoon red chili powder (adjust according to spice preference)
  • -- 1/2 teaspoon garam masala
  • -- 1/4 cup fresh cilantro leaves, chopped
  • -- Salt to taste
  • -- 2 tablespoons cooking oil
  • -- 1/4 cup heavy cream (optional, for a creamier texture)

  • Instructions:👇
    1. 1-- Heat oil in a pan or skillet over medium heat. Add cumin seeds and let them splutter.

    2. 2-- Add finely chopped onions and sauté until they turn golden brown.

    3. 3-- Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute until the raw aroma disappears.

    4. 4-- Add tomato puree to the pan and cook until the rawness of the tomatoes is gone and the mixture thickens slightly.

    5. 5-- Now, add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes until the spices are aromatic.

    6. 6-- Add sliced mushrooms to the masala and mix until the mushrooms are coated with the spice mixture.

    7. 7--Cover the pan with a lid and let the mushrooms cook for 5-7 minutes, stirring occasionally, until they release their moisture and become tender.

    8. 8-- Once the mushrooms are cooked, sprinkle garam masala over the curry and give it a final stir.

    9. 9-- If using heavy cream for a creamier texture, add it to the curry and simmer for another 2-3 minutes.

    10. 10-- Garnish the Mushroom Masala with fresh cilantro leaves and serve hot with steamed rice, naan, or roti.
